Sleeper Coffee is a roastery in Castlewellan, Northern Ireland, founded in April 2020 and named after the late Peter, father of founders Stephen and Jonny, who had originally suggested the name for a planned coffee shop. The roastery uses a Giesen smart roaster and describes a process of continuous tasting and refinement, grading all coffees above 85 SCAA points.
