The Coffee Officina is a speciality coffee roastery founded in London in 2013 by Marcella Fiori and Rory Lloyd, who brought together backgrounds in design and hospitality. The roastery runs a Giesen W15A drum roaster and uses Cropster software alongside manual cupping to guide its roast profiles.
A focus on cooperatives and female-led farms runs through their sourcing, with several coffees carrying Fairtrade, Rainforest Alliance, or Organic certification, though they work beyond certification where needed. The team is small by design, a co-founder plus a production manager, which keeps the operation close to every order.
They supply home brewers and wholesale café accounts, and run barista training from the roastery. Nicaragua has become a notable part of their current offering, with three award-winning coffees from the region featured in a recent collection.
