Watch House was founded in 2014 on Bermondsey Street in South London, taking its name from the 25-square-metre former watchhouse that guarded the graveyard of St Mary Magdalen's Church. That original building became the first site, and what Watch House calls its 'Modern Coffee' approach grew from there into a group of cafes across London, each designed as distinct spaces rather than replicated formats.

Roasting takes place at a dedicated Coffee Lab in South London. The business operates across retail coffee, subscriptions, and its network of coffeebars, with seasonal sourcing and a focus on sharing provenance with customers.

Watch House also sells brewing equipment and accessories, positioning itself as a full coffee experience operation rather than a roastery alone.
